Healthy Southwestern Bean Burgers

Recipe Ingredients for Cowboy Bean Burgers

15 ounces pinto beans
1/2 cup shredded Monterey Jack cheese
3/4 ounce tortilla chips
2 tablespoons finely chopped green onions
1 tablespoon finely chopped cilantro
1/8 teaspoon ground cumin
1 large egg white
8 rolls

Recipe Directions for Cowboy Bean Burgers

  1. Place pinto beans in a medium bow; partially mash with a potato masher or fork.

  2. Add cheese and next five ingredients; stir until well combined. Shape heaping tablespoons of bean mixture into oval patties.

  3. Heat oil on a nonstick skillet over medium-high heat. Add patties to pan; cook 4 minutes on each side or until patties are browned and thoroughly heated.

  4. Serve on small dinner rolls with ketchup, mustard, or light ranch dressing
