Whole wheat couscous, veggies, honey-mustard balsamic dressing

Recipe Ingredients for Couscous veggie salad

1 cup whole wheat couscous, dry
1 cup water
1 cup carrots, sliced
1 cup soy beans
1 cup mushrooms, sliced
1 cup red cabbage, shredded
1 cup tomato, diced
1/2 cup balsamic vinegar
3 tablespoons honey mustard

Recipe Directions for Couscous veggie salad

  1. Boil water, remove from heat and add couscous, cover and let sit 5 min.

  2. Combine honey mustard and balsamic vinegar and whisk till well mixed.

  3. Combine all ingredients, stir, chill (optional). Serve seasoned with cracked pepper.
