Recipe Ingredients for couscous and vegetable salad

2 cups whole wheat couscous
1 pint cherry tomatoes
1/2 english cucumber
1 red pepper
14 ounce chick peas
1/4 cup lime juice
4 tbsp extra virgin olive oil
5 cloves garlic
2 tsp salt
1 tsp pepper

Recipe Directions for couscous and vegetable salad

  1. Cook couscous as directed with water or broth.

  2. Add all ingredients to couscous.

  3. Refrigerate for ~ 1 hour.

  4. Enjoy!
