Tabouli is traditionally made with bulgur, but in this version of Moosewood's recipe, couscous is used instead. It tastes best after sitting for 30 minutes to 2 hours before serving.

Recipe Ingredients for Couscous Tabouli Salad

1 1/2 c boiling water
3/4 c couscous
1/3 c lemon juice
1 garlic clove, minced
2 c fresh parsley, chopped
4 scallions, chopped
3 tomatoes, diced
1 c chickpeas

Recipe Directions for Couscous Tabouli Salad

  1. In a large bowl, pour the boiling water over the couscous. Cover tightly and set aside until liquid is absorbed. Fluff couscous with a fork.

  2. Meanwhile, in a separate bowl, stir together the lemon juice, garlic, parsley, scallions, tomatoes and chickpeas.

  3. Toss the lemon-vegetable mixture with the couscous. Add more lemon juice to taste before serving.
