1/2 pound of ground beef
1/2 cup cooked cous cous
4 sliced scallions
1 cup crumbled feta
1/2 cup chopped dried apricots
4 bell peppers

Recipe Directions for Couscous-stuffed Peppers

  1. Brown meat and cook couscous according to package firections.

  2. Mix beef, couscous, scallions, feta and apricots. Season with salt and pepper.

  3. Stuff into hollowed out bell peppers and bake covered at 400 degrees until tender (45-50 minutes).
