Makes 6 servings



Need one small box of couscouse, 3 medium tomatoes, one large english cucumber, 2-3 lemons (juiced), one small tub of feta cheese, and a head of parsley. You can remove feta to make it lower calorie or add oranage peppers if you like them.

Recipe Ingredients for Couscous salad

280 dry couscous
375 grams chopped tomato
100 grams chopped english cucumber
1 cup parsley
1/4 cup lemon juice
200 grams feta cheese

Recipe Directions for Couscous salad

  1. Cook couscouse according to instructions on box.

  2. Chop tomato, cucumber, parsley.

  3. Juice Lemons.

  4. Mix in large bowl.

  5. Crumble in feta.

  6. Mix well

  7. Add pepper to taste.
