Quick and easy Mediteranean-style side dish.

Recipe Ingredients for Couscous Salad

1 cup couscous
1 1/4 cup water
1 tsp butter
1 cup tomatos
5 tbs kalamata olives
5 tbs parsley, chopped
1/4 cup feta, crumbled
2 tbs lemon juice
2 tbs olive oil
1/4 tsp salt
1/4 tsp pepper

Recipe Directions for Couscous Salad

Bring water and butter to boil, Stir in couscous, cover and remove from heat. In a large bowl, combine cherry tomatos (quartered), olives and parsley. Fluff couscous with fork, add to bowl and toss. Mix together lemon juice, olive oil, salt and pepper. Add to salad with feta and toss.
