Recipe Ingredients for Couscous Salad

10 oz. couscous
1 1/2 cups hot water
6 green onions, diced
4 plum tomatoes, quartered
1 seedless cucumber, cut into half-moons
2 tbsp fresh lemon juice
3 tbsp olive oil
1 1/4 tsp salt
1/4 tsp pepper

Recipe Directions for Couscous Salad

  1. Place couscous in a large bowl and pour water over the top. Cover and let stand for 5 minutes; fluff with a fork.

  2. Toss the couscous with the green onions, tomatoes, cucumber, lemon juice, oil, salt, and pepper.
