Love couscous w/dried cranberries- couldn't be easier to make.

Recipe Ingredients for Couscous Salad

1 c couscous
1/3 c dried cranberries
2 c grape tomatoes, halved
6 scallions, chopped
1/4 c carrots, shredded
1 tsp olive oil

Recipe Directions for Couscous Salad

Cook couscous by adding it to 1.5 C boiling water, stir and shut off burner and let it sit covered until it is fluffy. Add all othe ingredients and serve. Add little salt and pepper.
