Recipe Ingredients for Couscous Salad

2 cups water
2 tablespoons butter
1/4 teaspoon turmeric
1/4 teaspoon cinnamon
1/4 teaspoon chopped fresh ginger root
2 cups couscous
1/2 cup raisins
1 cup zucchini, chopped
1/2 cup carrot, chopped
1/2 cup scallions, chopped
1/4 cup green bell pepper, chopped
1/4 cup red bell pepper, chopped
15 ounces garbanzo beans, drained
3 tablespoons butter
1 tablespoons lemon juice
1 Salt to taste
8 Lettuce leaves
1/2 cup sliced almonds

Recipe Directions for Couscous Salad

  1. In a 1-quart saucepan, bring water, 2 tablespoons butter, turmeric, cinnamon, and ginger to a boil.

  2. Stir in couscous and raisins. Cover pan and remove from heat; let stand for 15 minutes.

  3. Transfer to a large mixing bowl and add zucchini, carrot, green onion, bell peppers, and garbanzo beans.

  4. In a small bowl, combine 3 tablespoons butter, lemon juice, and salt. Pour over salad and mix well, breaking up any clumps.

  5. Cover and refrigerate for 8 hours or overnight. To serve, mound on a lettuce-lined platter and sprinkle with almonds.
