couscous, veggies, yoghurt honey dressing

Recipe Ingredients for Couscous Salad

1 cup couscous
1 cup water
3 oz canned corn
5 oz carrots, chopped
5 oz bell pepper, chopped
9 oz cucumber, chopped
2 oz tomatoes, sun-dried packed in oil drained, chopped
6 oz chicken breasts
1/2 cup yoghurt
1 oz garlic
4 tbs lemon juice
2 tbs honey
4 tbs white vinegar

Recipe Directions for Couscous Salad

  1. boil water, stir in couscous, let sit for 5 mins before fluffing with fork

  2. add chopped veggies, sun dried tomatoes and chicken and stir to incorporate

  3. whisk remaining ingredients for dressing and drizzle over the top of couscous, mix

  4. chill for 1 hour or until throughly cold
