Couscous with fresh vegetables and a lemon vinaigrette. Cut out cheese, olives and cut back on the olive oil to make it less fattening and healthier.

Recipe Ingredients for Couscous Salad with Lemon Vinaigrette

8 oz. Toasted Israeli Couscous
4 c. chicken stock
1 Salt
1
2 red, orange or yellow peppers, seeded and diced
1 cucumber, seeded and diced
1/2 red onion, chopped fine
1/4 c. kalamata olives, chopped
1/2 c. feta cheese, cubed
2 T. basil, torn or sliced into a chiffonade
3 T. shallot chopped fine
1 t. lemon zest
2 T. lemon juice
3 T. balsamic vinegar
1 T. red wine vinegar
3/4 c. olive oil

Recipe Directions for Couscous Salad with Lemon Vinaigrette

  1. Prepare couscous with chicken stock according to package directions. (Usually 1 c. couscous to 1 1/4 c. liquid) Set aside and let cool.

  2. Meanwhile, chop vegetables and olives and place in a bowl. Season lightly with salt & pepper.

  3. Fold in couscous.

  4. Fold in feta cheese.

  5. Add vinaigrette to taste.

  6. Fold in basil.

  7. Chill in refrigerator for 30 minutes to allow flavors to combine.

  8. Serve with leftover vinaigrette.

  9. Combine ingredients in a canning jar. Fasten lid tightly and shake until emulsified. (Dressing will separate, just shake to re-combine.)
