Recipe Ingredients for Couscous Salad with Black Beans, Mushrooms, and Corn

2 tbsp olive oil
1 cup Israeli couscous
1 tsp sea salt
1 tsp black pepper
1/2 lb mushrooms
4 scallions
1 1/4 c corn
15 1/2 oz black beans
2 tbsp lime juice
1 jalapeno pepper

Recipe Directions for Couscous Salad with Black Beans, Mushrooms, and Corn

  1. Cook the couscous for 15 minutes in 1.5 c water.

  2. In a large skillet heat oil stirring in mushrooms, cook for 5 mins. Transfer to large bowl.

  3. Cook scallions and corn for 5 mins. Add mushrooms.

  4. Add couscous, black beans, lime juice, jalapeno, and green parts of scallions to mushroom mixture. Divide into four bowls.
