Salad with couscous, artichoke and flavored with basalmic vinegar

Recipe Ingredients for Couscous salad with Artichoke

1 cup couscous, dry
1/3 cup onion
1 1/2 cup vegetable broth, fat free
9 ounces artichoke hearts
1 cup diced tomatoes
1/2 tsp thyme
1/4 tsp black pepper
1/4 cup olive oil
1/4 cup balsamic vinegar

Recipe Directions for Couscous salad with Artichoke

  1. Bring vegetable broth to boil

  2. Stir in couscous and onion. Remove from heat and cover for 5 minutes.

  3. Flush couscous with fork.

  4. Stir in thyme and pepper.

  5. Allow to cool.

  6. In large bowl, stir in artichokes and tomatoes.

  7. Mix together the olive oil and vinegar; pour into couscous and gently stir.
