Succulent dish from Morocco. Here lamb is excluded (pricey...). Lamb stock is better than beef stock, if you have it.

Recipe Ingredients for Couscous royal

2 onions
6 garlic cloves
1 rutabaga
10 carrots
4 liters beef stock
3 tbsp cumin
2 tbsp coriander
2 tbsp paprika
1 tbsp cayenne pepper
1 tbsp salt
4 zucchinis
1 cup dried chick peas, cooked
1 green bell pepper
1 1/10 kg skinless chicken thighs
6 merguez sausages
1 tbsp cumin
1 tbsp turmeric
1 tbsp coriander
1 tbsp paprika

Recipe Directions for Couscous royal

  1. Dice the first 4 veggies.

  2. Put in a pot, cover with stock. Add first spices and simmer for 1 hour.

  3. Add zucchinis, pepper and cooked chick peas.

  4. Simmer for 1 hour.

  5. Cook the chicken thighs and merguez in a pan with remaining spices.

  6. Add to vegetables and simmer for 30 minutes.

  7. Adjust seasonning to taste.

  8. Serve with couscous.
