Couscous with tomato and fresh herbs

Recipe Ingredients for Couscous

1 c organic chicken broth
1 c couscous
1/4 oz lemon juice
1 tbsp smart balance 67% buttery spread
1 medium tomato, chopped
1/10 oz parsley
1/10 oz oregano
1/10 oz basil

Recipe Directions for Couscous

  1. combine chicken broth, butter, lemon juice, and finely chopped herbs and bring to a boil.

  2. Once boiling, add couscous, stir and cover for 4 minutes.

  3. Fluff with fork, add chopped tomato and serve
