Recipe Ingredients for Couscous with Raisins, Pine Nuts, and Curry

1 1/4 cup chicken stock, fat-free, low sodium
3/4 cup couscous
1 tbsp margarine
3/4 onions, finely chopped
1 tsp garlic, minced
1 cup sweet red pepper, finely chopped
1/4 cup carrots, diced
1/4 cup raisins
1 tsp curry powder
1/4 cup pine nuts, toasted

Recipe Directions for Couscous with Raisins, Pine Nuts, and Curry

  1. In small saucepan, bring chicken stock to boil. Stir in couscous and remove from heat. Cover and let stand until liquid is absorbed, 5 to 8 minutes. Place in serving bowl and keep warm.

  2. Meanwhile, in nonstick saucepan, melt margarine; saute onions, garlic, red pepper and carrots until softened, approximately 5 minutes. Add raisins, curry powder and pine nuts; mix until combined. Add to couscous and mix well.
