Cold couscous salad with pistachios, currents and cinnamon. Makes 6 1-cup servings.

Recipe Ingredients for Couscous with Pistachios

1 c. couscous
14 oz. chicken broth
1 T. butter
1/2 c. raisins or currents
1/2 c. pistachios, shelled, salted, roasted
1/3 c. scallions, sliced
6 T. olive oil
1/3 c. lemon juice
2 T. cinnamon

Recipe Directions for Couscous with Pistachios

  1. Place currents in bowl. Boil enough water to cover currents. Pour over currents and let sit for 10 mins.

  2. Meanwhile, pour chicken broth in glass bowl. Add butter. Microwave on high for 2 mins. (until butter melts).

  3. Pour couscous into chicken stock. Cover & let set for 5 mins.

  4. Slice scallions.

  5. Fluff couscous, add pistachios, scallions and drained currents.

  6. Stir to combine. Add dressing, stir until dressing is incorporated.

  7. DRESSING:

  8. Juice one lemon, add olive oil & cinnamon. Beat with wire wisk to combine. Pour over couscous mixture. Stir until combined.
