large grain or medium grain couscous can be used

Recipe Ingredients for Couscous Pilaf

1 tbs olive oil
1 tbs margarine
1 small onion
3/4 tsp cumin
1 pinch cayenne
2/3 c couscous
3/4 tsp salt
1/4 tsp pepper
2 tbs parsley

Recipe Directions for Couscous Pilaf

  1. bring 2-1/2 cups of water to a boil

  2. in a large saucepan, heat olive oil and margarine over medium-low heat

  3. add onions and cook lightly until browned (about 8 mins)

  4. stir in cumin and cayenne, and saute for 1 minute more

  5. stir in couscous, salt, pepper and boiling water

  6. cover and simmer over low heat until tender and water is absorbed (about 10 mins)

  7. add parsley and serve
