Recipe Ingredients for couscous with peas and asparagus

2 cups couscous
1 1/4 cups boiling water
1 tsp cumin
5 tbsp olive oil
8 oz asparagus
1 cup frozen peas
5 oz corn
4 tbsp lemon juice

Recipe Directions for couscous with peas and asparagus

  1. Place couscous in large bowl. Por in boiling water, cumin, salt, and 1T oil. Let stand for 10 min or until couscous has absorbed water. Break p with fork and drizzle with 1T oil.

  2. Cook asparagus, peas, and corn in a large pot of boiling water - 5-7 min. Drain well.

  3. Beat lemon juice and remaining oil. Season with salt and pepper. Drizzle over couscous.

  4. Mix peas into couscous and arrange asparagus, baby corn on top.
