1 cup dry couscous
1 tbsp olive oil
1 large onion
1/4 cup parsley

Recipe Directions for Couscous with Onion & Parsley (no salt)

  1. Bring 1 cup of water to a boil.

  2. In a large saucepan sautee the onions in the olive oil.

  3. When the onions are translucent, add the dry couscous and toast for 1 min over medium high heat.

  4. Add the boiling water, mix well and let stand for 5 mins.

  5. Stir in the parsley.

  6. Add salt, pepper, lemon juice to taste! Zucchini and sweet peppers added to the onion are also a good variation when sauteeing. For more decadence, substitute water with white wine or chicken stock, and add butter.
