Recipe Ingredients for couscous with mint and zucchini

4 zucchini
1/3 cup olive oil
2 tbsp white wine vinegar
1/4 cup shallots
1 tsp cumin
1/4 cup mint
1 1/2 cups couscous
1 1/4 cups boiling water
1/4 cup basil

Recipe Directions for couscous with mint and zucchini

  1. Grill zucchini. Add 4T EVOO, vinegar, shallots, cmin and half mint. Season. Stir gently and set aside.

  2. Prepare couscous. Stir in basil, mint and EVOO.

  3. Transfer to a serving dish. Drain liqid from zucchini and mix into couscous. Arrange zucchini slices over the top.
