Recipe Ingredients for Couscous with Mint-Parsley Dressing

1 cup Couscous
1 1/2 cups water
1 medium tomato, diced
1 cucumber, peeled, seeded and diced
1/4 cup fresh mint
1/2 cup fresh parsley
1/3 cup extra virgin olive oil
1 tablespoon fresh lemon juice (1 lemon + zest)
1/4 teaspoon sea salt

Recipe Directions for Couscous with Mint-Parsley Dressing

  1. Bring couscous and water to a boil. Reduce heat, cover and simmer about 5 minutes.

  2. Add diced cucumber and tomato.

  3. Combine the rest of the ingredients in a food processor or blender and blend until smooth. Add dressing to couscous and toss.
