1 cup water
3/4 cup uncooked couscous
1 cup grape tomatoes
1/4 cup chopped pitted kalamata olives
2 tablespoons minced red onion
2 tablespoons chopped fresh parsley
1 tablespoon fresh lemon juice
2 teaspoons chopped fresh oregano
1 teaspoon minced garlic
1 tablespoon extravirgin olive oil
1/4 teaspoon freshly ground black pepper
1/4 teaspoon kosher salt

Recipe Directions for couscous mediterranian

Bring 1 cup water to a boil in a medium saucepan; gradually stir in couscous. Remove from heat; cover and let stand 5 minutes. Fluff with a fork. Place couscous, tomatoes, and the next 6 ingredients (through garlic) in a large bowl. Add 1 tablespoon oil, 1/4 teaspoon pepper, and 1/4 teaspoon salt to bowl; toss to combine.
