A Fresh twist to a great summer salad.

Recipe Ingredients for Couscous, chickpea and Raisins Salad

1 cup Chicken Stock
1 cup couscous
3/4 cup canned chickpeas
1/3 cup raisins
1/4 cup chopped green onions
1/4 cup diced red bell peppers
1/4 cup chopped parsley
1 tbsp olive oil
2 tbsp Orange juice
2 tbsp fresh lemon juice
2 tsp grated orange rind
3 tbsp liquid honey
1 tsp minced garlic

Recipe Directions for Couscous, chickpea and Raisins Salad

  1. Bring chicken stock to a boil, remove from heat add the couscous and let stand for 3-5 minutes.

  2. Transfer to bowl and stir. Let cool and stir more to make it fluffy.

  3. Add the chickpeas, green onions, red peppers, parsley, into the cooled couscous.

  4. Make dressing combine together the olive oil, orange juice, lemon juice, orange rind, honey and garlic into a small bowl and add to salad. Mix and serve.
