Cous Cous Tabouli Recipe

Based on a recipe from Field to Plate, modified to the ingredients I had on hand. The cous cous is from the bulk food section at Whole Foods and tasted so wonderful all on its own, so fluffy. I won't go back to boxed cous cous evah! Also, this recipe required no "real" cooking.

Recipe Ingredients for Cous Cous Tabouli

1 c cous cous
1/2 c cucumber, chopped
3 scallions, chopped
1 plum tomato, diced
2 T mint, chopped
2 T parsley, chopped
1 lemon, zest and juice
1 1/2 T olive oil
1 c garbanzo beans

Recipe Directions for Cous Cous Tabouli

  1. In small bowl add 1 1/4 c boiling water to 1 cup cous cous, cover and let set for 10 minutes

  2. Chop the veggies, herbs and toss in larger bowl

  3. Add the garbanzo beans *aka chick peas

  4. Toss with the lemon zest, juice and olive oil.

  5. Fluff cous cous with a fork and cool.

  6. Add to other ingredients mix well.
