Recipe Ingredients for cous cous with grilled vegetables

2 c cous cous, dry
2 c chicken stock
2 red peppers
1 1/2 c cherry tomatoes
1 zucchini
2 yellow squash
1 1/2 c fennel, chopped
6 small onions
1 c portabello mushrooms, diced
3 tbsp olive oil
4 tbsp balsamic vinegar
1 tsp butter
4 oz goat cheese, semi-soft

Recipe Directions for cous cous with grilled vegetables

  1. coat all the veg in oil & vinegar and grill until tender then chop into bite size pieces

  2. in a large bowl microwave the chicken stock & butter on high for 3 mins add cous cous stir once and cover for 5 mins.

  3. crumble cheese into small pieces

  4. add veg and cheese to cous cous and mix

  5. serve hot or cold
