Cous Cous Capsicum and bean salad

Recipe Ingredients for Cous Cous Capsicum and bean salad

1 cup Co Us Cous
100 g green beans
.5 pepper red capsicum
1/2 cup mint leaves, chopped, several reserved for garnish
1/2 cup coriander leaves, chopped, several reserved for garnish
1/4 cup peanuts
1/8 cup lime juice
1 tsp finely grated lime zest
1/6 cup peanut oil
1 tbsp brown sugar

Recipe Directions for Cous Cous Capsicum and bean salad

  1. Cook barley in a large saucepan of boiling water according to packet directions. Drain and place in a large bowl.

  2. Add beans, capsicum, onion, mint, coriander and peanuts. Mix together lime juice and zest, oil and sugar. Add to barley and toss to combine. Garnish with extra mint and coriander.
