Recipe Ingredients for Cous Cous Bites

1 cup, dry, yields Couscous, Cooked
0.75 cup Crushed Tomatoes
1 serving Vegetable Cooking Stock
0.33 cup, chopped Onions
1 clove Garlic
0.75 tbsp Vegetable Oil, Canola
1 large Egg, Whole
2 serving provolone cheese slice southern homes
1,5 cup Spinach

Recipe Directions for Cous Cous Bites

  1. 1/3 cup chopped onion, sautéed until translucent with 1.5 tsp garlic

  2. ¾ cup vegetable stock

  3. ½ cup crushed tomatoes

  4. Boiled together, add basil, oregano, parsley, salt, pepper, onions

  5. Stir in 1 cup cous cous, cover and take off heat, let sit for 7 min

  6. Sautee 2 cups spinach in same pan as onions until just wilted

  7. Stir cous cous, add ¼ cups crushed tomatoes, spinach, 2 slices shredded provolone, 1 egg (when cooled a bit), taste for seasoning

  8. Spoon into greased muffin tin, cook at 350 degrees 10 min
