Recipe Ingredients for Courgette and Red Pepper Frittata

1 small onion, chopped
1 garlic clove, crushed
1 red pepper, seeded and thinly sliced
1 courgette, thinly sliced
1 tbsp olive oil
100 g potatoes, cooked and diced
4 eggs
1 tsp oregano or basil or marjoram or mixed
1 salt
1 pepper
25 g Parmesan cheese, freshly grated

Recipe Directions for Courgette and Red Pepper Frittata

  1. Cook the onion, garlic, red pepper and courgette in the oil in a large non-stick frying pan, stirring occasionally, for 5 minutes or until softened.

  2. Add the potatoes and cook for 2 minutes, stirring occasionally.

  3. Beat the eggs with the herbs and seasoning.

  4. Pour the egg mixture evenly over the vegetables in the frying pan and cook over medium heat until the eggs are beginning to set and the frittata in golden brown underneath.

  5. Sprinkle with cheese and cook under a medium grill until the top in lightly set and golden brown. Serve warm or cold, cut into wedges, with a side salad.
