Lovely moist cake that keeps well. Serve plain or dusted with icing sugar.

Recipe Ingredients for Courgette & Poppy seed cake

175 g flour, self-rising
50 g quinoa flour
1/2 tsp baking powder
1/2 tsp cinnamon
1 pinch of salt
3 eggs
60 ml olive oil
60 g white beans, drained & mashed
150 g muscovado sugar
1 tsp vanilla
3 tbsp poppy seeds
300 g zucchini, grated

Recipe Directions for Courgette & Poppy seed cake

  1. heat oven to 180 Celcius, grease a 20cm cake tin or springform tin.

  2. put the self-rising flour, quinoa flour, baking powder, cinnamon and salt in a bowl.

  3. in a separate bowl, beat together the eggs, oil, mashed beans, brown sugar, vanilla and poppy seeds.

  4. mix into the flour, then stir in the grated zucchini.

  5. pour into prepared tin and bake for 45-50 minutes until a skewer comes out clean.

  6. leave for a couple of minutes, then turn out to a wire rack to cool.
