225 grams Squash, Summer, Zucchini, Includes Skin
30 grams Flour
1 medium Egg, Whole
1 dash Salt

Recipe Directions for Courgette Fritter

  1. Grate the Courgette,and squeeze it in a tea towel to press out the juice, then add to a bowl with the flour and beaten egg and mix well

  2. Heat some oil in a pan, then add two tablespoons of the batter per fritter, cooking 3 at a time.

  3. cook for 2-3 minutes on each side then serve
