A kind of courgette and wensleydale version of spanakopita.

Recipe Ingredients for Courgette and cheese pie

2 medium Squash, Summer, Zucchini, Includes Skin
2 leek Leeks, (Bulb And Lower Leaf-portion)
75 grams Watercress
10 sheet Phyllo Pastry
50 grams Butter
5 leaves Basil, Fresh
1 medium Egg, Whole

Recipe Directions for Courgette and cheese pie

Fry the courgettes, leeks and watercress in a non-stick pan. Allow to cool. Grease a baking dish, and lay most of filo sheets so they cover the base and sides of the dish. Leave extra filo hanging over edges to fold back over the filling later. Brush each sheet with a little butter when you lay it down. Mix the cooled vegetables with the crumbled cheese and an egg. Season. Pour filling into prepared dish. Fold filo sheet edges over, brush with butter between sheets. Put remaining sheets on top so it looks neat - again brushing with butter as you go. Bake for 30-40 minutes at Gas 4, or until top is golden brown and crunchy.
