Easy chicken and vegetable recipe

Recipe Ingredients for County Fair Chicken

1/2 lb chicken, boneless/skinless
1 potato, peeled and diced
1 cup carrots, peeled and sliced
1/4 cup onion, quartered
2 tsp olive oil
1/4 packet onion soup mix
1/8 tsp garlic powder
1/8 tsp pepper
1/4 cup chicken broth

Recipe Directions for County Fair Chicken

  1. Toss chicken, potatoes, carrots, and onions with olive oil

  2. Sprinkle mixture with soup mix and seasonings and toss again, making sure all is coated well.

  3. Place mixture in a sprayed baking dish and slowly pour in broth.

  4. Seal with foil and bake 1 hour at 350 or until done.

  5. Remove foil for the last 15 min. of baking
