Recipe Ingredients for Country Vegtable Soup w Couscous

2 tbls olive oil
1 pound mushrooms, medium size halved
1 pound eggplant, cut in 1 inch chunks
12 ounces zucchini, cut in 1/2 inch chunks
1 pound carrots, peeled cut in 1/2 inch slices
1 medium onion, coarsly chopped
28 ounces tomatoes, in juice, canned
1 tsp sugar
3/4 tsp salt
1/2 tsp cumin
14 1/2 ounces vegetable broth
1 cup couscous
2 tsp parsley, chopped
1 tbls flour
15 ounces garbanzo beans

Recipe Directions for Country Vegtable Soup w Couscous

  1. In saucepan, heat 2 tsp olive oil over medium high heat, Add mushrooms and cook until goldenbrown and liquid evaporates, transfer to bowl

  2. In same pan, heat 2 tsp oil until hot. Add eggplanr and zucchini and cook until golden brown, transfer to bowl with mushrooms. In same pan heat remaining 2 tsp oil, add carrots and onion and cook until golden brown. Stir in tomatoes and thier juice, sugar, salt and cumin, heat to boiling. Reduce heat to low, cover and simmer 10 minutes or until vegetables are tender

  3. Meanwhile, in 2 t saucepan, heat vegetable broth to boiling. Add couscous, cover and remove from heat, let stand 5 minutes, stir in chopped parsley

  4. In cup, mix flour and 2 tbls water. Stir flour mixture and garbanzo beans into vegetables, heat to boiling. Boil 2 minutes until stew thickenes and beans are heated through. Serve over couscous
