An authentic southern Ohio meatloaf recipe, making Meatloaf Mondays awesome for three generations.

Recipe Ingredients for Country Style Meatloaf (Not Health Food)

1 lb lean ground beef
4 serving Townhouse Reduced Fat Crackers (24 crackers)
3/4 cup French Fried Onions
3/4 cup ketchup
1/2 cup ketchup
1/4 cup mustard

Recipe Directions for Country Style Meatloaf (Not Health Food)

  1. Crush crackers into small pieces.

  2. Combine all ingredients except 1/2 cup ketchup, mix well. The final appearance should be fairly uniform, without many visible chunks of cracker or onion.

  3. Press into loaf pan or, alternatively, shape into a loaf and place on a broiler pan to facilitate drainage of fat. There will be a lot of liquid fat leaving the loaf. A fun presentation which also reduces cooking time is the use of 3 3x5 loaf pans rather than one 9x5 pan.

  4. Glaze loaf or loaves with reserved ketchup, adding more if a thicker glaze is desired.

  5. Bake at 350 degrees until reaching 160 degrees in the center.

  6. If ketchup glaze begins to blacken in any areas, simply cover with foil for remainder of cooking time.
