Recipe Ingredients for Country- Style Beef and Green Pepper Soup

12 1/2 grams peanut oil
0.77 pounds beef, lean
100 grams green bell pepper
185 grams yellow onion
1 pound tomatoes, chopped
126 grams corn
116 grams Asparagus, raw
162 grams green cabbage
4 cups beef broth, low sodium
1 tbsp. oregano
2 tbs. balsamic vinegar
1 tbs. salt
1 tsp. black pepper

Recipe Directions for Country- Style Beef and Green Pepper Soup

  1. Heat 1 tsp oil in a dutch oven on medium high. Add beef and cook 3 minutes, stirring frequently. Drain on paper towels, set aside.

  2. Heat 2 tsp oil in same pan. Add bell peppers, and onion and cook for 6 minutes until golden. Add beef back along with tomatoes, Asparagus, corn, cabbage, broth, and oregano. Bring mixture to a boil then reduce to a simmer. Cook 15 minutes.

  3. Remove from heat, stir in remaining ingredients. Let stand 10 minutes.
