Recipe Ingredients for COUNTRY CORN CHOWDER 7 POINTS

6 cups WATER
6 medium POTATOES PEELED AND CUBED
1 medium ONION, CHOPPED
2 cloves GARLIC, MINCED
1 stalk CELERY, CHOPPED
2 VEGETABLE BOUILLON
1/8 teaspoon DRIED SAGE
1/2 teaspoon DRIED THYME
1/2 teaspoon OREGANO
1/2 teaspoon SEA SALT
1 PEPPER TO TASTE
3 cups FROZEN CORN
1 tablespoon BUTTER
1 GREEN PEPPER, MINCED
1/2 cup SCALLIONS, MINCED
1/4 cup HEAVY CREAM
2 tablespoons OLIVE OIL
1 teaspoon GARLIC, MINCED
4 cups FROZEN STRING BEANS CUT INTO 2-
1 inch PIECES
1 PEPER TO TASTE
2 cups WATER
2 teaspoons VEGETABLE BOUILLON

Recipe Directions for COUNTRY CORN CHOWDER 7 POINTS

  1. START WITH THE STRING BEANS

  2. IN A LARGE SAUCE PAN, HEAT OIL. ADD GARLIC AND BEANS,AND SAUTE OVER HIGH HEAT TO SEAR BEANS, STIRRING FREQUENTLY SO THEY DO NOT BURN, ADD THYME , SEA SALT, AND PEPPER TO TASTE. ADD WATER VEGETABLE BOUILLON. BRING TO A BOIL, COVER TIGHTLY, REDUCE HEAT TO MEDIUM-LOW, AND SIMMER FOR 20-30 MINUTES OR UNTIL BEANS ARE TENDER. ADD MORE WATER, IF NECESSARY, WHEN DONE SET ASIDE.

  3. BRING 6 CUPS OF WATER TO A BOIL. ADD POTATOES, ONION, GARLIC, AND CELERY. RETURN WATER TO A BOIL AND ADD BOULLION AND SEASONING. COVER AND SIMMER OVER MEDIUM HEAT FOR 15-20 MINUTES OR UNTIL POTATOES ARE TENDER BUT NOT MUSHY. COOL SLIGHTLY. REMOVE 2 CUPS OF POTATOES STOCK AND SET ASIDE. BLEND REMAINING CHOWDER IN SMALL INCREMENTS. REHEAT OVER LOW HEAT. ADD CORN AND RESERVED POTATOES. SIMMER, STIRRING TO INSURE THAT CHOWDER DOES NOT STICK, FOR 5 MINUTES. MELT BUTTER IN A SMALL SKILLET. ADD GREEN PEPPERS AND SCALLIONS. SAUTE UNTIL VEGETABLES TURN A BRIGHT GREEN, ABOUT 3 MINUTES. STIR INTO SIMMERING CHOWDER. ADD STRING BEANS,AND CREAM AJUST SEASONING. SERVES 4
