Turkey ham can be swapped with bacon, about 8 rashers

Recipe Ingredients for Country breakfast

2 large potatoes
1 large onion
6 eggs
1 tbls mixed herbs
200 g turkey ham
2 tbls butter
1/2 chicken stock cube

Recipe Directions for Country breakfast

  1. Julienne the potatoes into fine sticks

  2. Dice the onions

  3. On medium heat, melt the butter or margarine in a pan and add the stock cube then the onions, cook until clear

  4. Add the potatoes to the onions and cook until potatoes are golden brown

  5. Add the mixed herbs

  6. Arrange the turkey ham or bacon on top of the potatoe and onion mixture

  7. Carefully pour the beaten eggs over the turkey ham/bacon

  8. put under grill until egg is solid
