Recipe Ingredients for Coumbian Lentil Soup

1 1/2 cups uncooked lentils
3 cloves garlic, chopped
1 cup chicken or vegetable broth
4 cups water
1 tablespoon olive oil
1 small onion, chopped
14 1/2 ounce tomatoes,drained and chopped
1 Salt
1 Freshly ground black pepper
2 tablespoons chopped cilantro or parsley
2 teaspoons lemon juice
2 hard-boiled eggs, sliced

Recipe Directions for Coumbian Lentil Soup

  1. Spread lentils in batches on plate. Pick through them

  2. carefully, discarding any stones. Rinse and drain lentils.

  3. Combine lentils, garlic, broth and water in medium

  4. saucepan; bring to a boil. Cover and simmer over low heat

  5. 20 to 30 minutes or until lentils are tender.

  6. Meanwhile, heat oil in skillet. Add onion and saute over

  7. medium heat, stirring often, about 5 minutes or until

  8. lightly browned. Add tomatoes, and salt and pepper to

  9. taste. Stir and cook 5 minutes or until sauce is thick. Add

  10. to lentil soup and return to a boil. Remove soup from heat.

  11. Add 1 tablespoon cilantro, and salt, pepper and lemon juice

  12. to taste. Serve soup garnished with slices of hard-cooked

  13. egg and sprinkled with remaining 1 tablespoon cilantro.

  14. Yield: 4 servings.
