A more veggie filled take on the classic Shepherd's Pie

Recipe Ingredients for cottage pie

1/2 cup Potatoes, Boiled, Cooked In Skin, Flesh
0.25 cup Organics Chicken Culinary Stock
1 tbsp Natural Butter Blend
16 oz Ground Turkey
1/2 cup Peas, Green
1 cup Corn, Sweet, Yellow
1/2 cup pieces Mushrooms
1 medium raw Onion Yellow
1 tbsp chopped Shallots
1 tsp Seasoned Salt
1/2 cup slices Carrots
1 tbsp Extra Virgin Olive Oil
0.25 cup Bread Crumbs

Recipe Directions for cottage pie

  1. Cut 6 small Idaho potatoes into equal size chunks. Boil until soft. Drain. Whip with 2 tbs earth balance and 1/4 cup chicken stock.

  2. Saute onion and shallot in 1 tbs EVOO until soft and slightly brown. Add chopped carrots and cook for 5 min. Add ground turkey and minced garlic. Brown turkey. Add corn and frozen peas, cook for 3 min,

  3. Put meat and veggie mixture into the bottom of a casserole dish. Spread mashed potatoes on top of meat, Sprinkle breadcrumbs on top of potatoes.

  4. Bake, uncovered, at 350 for 30 min. Cool 10 min before serving.
