SB minced beef and veg with potato top

Recipe Ingredients for cottage pie

2 tsp olive oil
1 kg minced beef
150 g onion
120 g carrot
60 g celery
1 tbsp thyme
500 ml beef stock
1 tbsp worcestershire sauce
60 ml tomato puree
60 g frozen peas
1 1/5 kg potato
40 g butter
60 ml skimmed milk

Recipe Directions for cottage pie

  1. heat oil in a large pan and cook mince and onion, stirring until mince is brown. add carrot, celery, thyme, stock, worcestershire sauce and tomato puree. simmer uncovered for 30 mins.

  2. add peas and cook uncovered for 10 mins. spoon mixture into a 2.5ltr oven proof dish.

  3. meanwhile, boil potatoes, drain and mash with a little butter and milk until smooth.

  4. pipe or spread the potato over the top of the mince mixture. bake uncovered in a moderate oven (180 deg) for 30 mins or until browned and heated through.

  5. can be made a day ahead and warmed through

  6. store covered in the fridge

  7. suitable for freezing

  8. not suitable for microwave cooking
