With artichoke and potato topping

Recipe Ingredients for Cottage Pie

500 g ground lamb
1 large onion
1 carrot
300 g artichoke
500 g potatoes
20 g butter
15 g olive oil
25 g Parmesan cheese
15 g cornflour
250 ml water
1/2 teaspoon oregano
1 salt and pepper

Recipe Directions for Cottage Pie

  1. Fry onion and lamb in olive oil

  2. add carrot and continue to simmer for five minutes

  3. dissolve two stock cubes in water and add cornflour

  4. add stock to lamb mixture and cook to thicken

  5. meanwhile cook potatoes and artichoke in salted water until tender

  6. drain and mash with butter

  7. drain lamb mixture (reserving stock) and add to base of oven dish

  8. return a little of stock if mixture is too dry

  9. cover with layer of mash leaving rough op

  10. grate Parmesan or other hard cheese over

  11. bake in oven 200C for about 40 minutes until top crisp and brown

  12. make up extra stock eith reserved stock and water/cornflour
