Cottage Pie is always made with cooked beef. You can also add other vegetables as you wish. It's a good way to use up the frozen veg.

Recipe Ingredients for Cottage Pie

750 g minced lamb
25 g soya margarine
1 leek
3 tablespoons of flour
1/2 teaspoon mustard
375 ml of chicken stock
2 tablespoons of worcestershire sauce
1/2 cup of milk
30 g of soya margarine
1500 g mashed potato

Recipe Directions for Cottage Pie

  1. Grease a 2 lire casserole dish and preheat the oven to 210C (415F/Gas 6-7)

  2. Melt the 25g of soya margarine in a large pan. Add the leek and cook until the meat is browned.

  3. Sprinkle the flour and mustard into the pan and stir for 1 minute.

  4. Remove from the heat and gradually add the stock and stir until smooth. Return to the heat, bring to the boil, then reduce the heat and simmer for 3 minutes.

  5. Add the meat and worcestershire sauce to the pan and stir.

  6. Remove from the heat and spoon the mixture into the casserole dish.

  7. To make the potato topping mix the milk and 30g of soya margarine into the mashed potato. Spread evenly over the meat and rough up the surface with a fork. Bake for 40-45 minutes, or until the topping is lightly golden and the pie is completely heated through.
