A Low GI tweak to a Classic English dish

Recipe Ingredients for Cottage Pie.... Low GI GI Jane

1 lb minced beef
1 large onion, chopped
12 oz carrot, diced
2 teaspoons olive oil
1/2 pint (beef) stock
1 tablespoon tomato puree
1 teaspoon Lea & Perrins Worcester sauce
1 teaspoon dried thyme
1 teaspoon dried parsley
1 salt and pepper
8 oz peas
1 oz red lentils
1 1/2 lbs potatoes, peeled and cut into big pieces
1 1/2 lb sweet potatoes, peeled and cut into big pieces
4 tablespoons milk

Recipe Directions for Cottage Pie.... Low GI GI Jane

  1. Fry the minced beef in a dry, non-stick pan, stirring frequently to break up any lumps. Then drain through a colander and rinse well to remove the fat

  2. Heat the olive oil and cook the chopped onion until softened. Add the diced carrots, cover and allow the flavours to come out for about 5 - 10 minutes

  3. Return the minced beef to the pan and add the lentils, stock, tomato puree, worcester sauce, herbs and seasoning. Stir well, cover and simmer gently for about 30 minutes until the sauce has thickened/reduced and the vegetables are tender. Remove from the heat, stir in the peas and set aside for 20 minutes to cool

  4. Boil the potatoes and sweet potatoes for 10 - 15 minutes until tender, drain, season and mash. Then, with a wooden spoon, beat in enough milk to make a smooth-textured mash

  5. Transfer the minced beef and vegetables to an oven-proof dish and level with a spoon. Take the mashed potato, a tablespoon at a time and dot randomly across the top. Spread it out evenly with the back of a fork leaving rough peaks.

  6. Bake in a moderate oven (Gas 6) for about 30- 40 minutes until the topping has crisped.
