Cut and pasted from various recipes. Turned out great! Next time I am using more meat and more veggies...will use some corn to go with that cornbread.

Recipe Ingredients for Cottage Pie w/Cornbread Topping

1 lb ground beef
2 tbsp minced onion
1/2 c. chopped carrots
1/2 c. frozen peas
1/2 c. chopped celery
1 tsp vegetable oil
2 2/3 c. potato flakes
1 1/3 c. skim milk
2/3 c. cornmeal
1/3 c. flour
1/8 c. sugar
2 tsp baking powder
1/4 c. vegetable oil
1 egg
2/3 c. skim milk

Recipe Directions for Cottage Pie w/Cornbread Topping

  1. Preheat oven to 350. Put empty casserole dish inside while preheating.

  2. Brown beef with chopped onion and seasoned salt in skillet. Drain.

  3. In another skillet, cook vegetables with 2 tsp vegetable oil until veggies are tender.

  4. Prepare potato flakes according to box directions. Make 6-8 servings.

  5. Make cornbread topping: combine cornmeal, flour, sugar, baking powder, 1/4 c. veggie oil, egg, and 2/3 c. milk. Let mix sit 3-4 minutes, then stir again.

  6. Assemble in heated casserole dish: spread meat mixture in bottom, then layer on veggies and mashed potatoes, then spoon cornbread mixture on top.

  7. Bake 15-20 minutes or until cornbread topping is done.
