Recipe Ingredients for Cottage Cheese and Spinach Fritata with Tomato

4 egg whites
3/4 cup onion, diced
1 clove garlic
1 cup spinach
1 roma tomato
1/2 cup 2% cottage cheese
2 grams Pam

Recipe Directions for Cottage Cheese and Spinach Fritata with Tomato

Saute onion and garlic on lightly coated pan. Add egg white. Cook w/o stirring until almost firm. Layer spinach, add a little water to create steam. Lower heat to prevent burning. Cover until spinach has steamed flat. Add sliced tomato (like a pizza) Scatter or layer cottage cheese (or grated cheddar), cover until warmed.
