A rich quiche (can make a low-fat version) - goes well with grilled tomatoes and sugar snap peas.

Recipe Ingredients for Cottage Cheese Quiche

8 oz swiss cheese
4 slices lean ham
216 g (1 crust) pie crust
2 teaspoons chopped chives
16 oz (1 container) 4% cottage cheese
1 cup 2% milk
1 teaspoon salt
1/2 teaspoon chipotle chili powder
6 eggs (extra large)

Recipe Directions for Cottage Cheese Quiche

  1. Heat oven to 450F.

  2. Roll pie crust into deep dish pie pan and flatten along sides.

  3. Shred swiss cheese and place in bottom of crust.

  4. Cut ham into slivers and place on cheese.

  5. Sprinkle chives on top of ham and cheese.

  6. Blend cottage cheese, milk, salt and chili powder until smooth.

  7. Add eggs and blend until mixed.

  8. Pour into crust carefully.

  9. Bake at 450 F for 10 minutes and reduce heat to 350 F - bake for 25-30 minutes more until brown on top and knife inserted in middle comes out clean.

  10. Let rest 10 minutes before serving.
