Recipe Ingredients for Cottage Cheese Pancakes

3 large eggs
9/10 cup fat free cottage cheese
1 cup dry uncooked oatmeal
7 small strawberries
1 dash of salt
2 tbsp olive oil

Recipe Directions for Cottage Cheese Pancakes

  1. Grab your handy blender and dump the ingredients in, in the order they appear (otherwise the mixture will get all chunky).

  2. So, eggs in first, then start the blender.

  3. As it's blending, pour in the cottage cheese (2 Breakstone's snack-size), then the banana if you're using it, then whatever sweeteners and spices you like, then the oatmeal.

  4. Once this is nicely blended, cook as you would pancakes, in a nonstick pan over medium-low heat.
