1 c. nonfat cottage cheese
4 medium eggs
1/2 c. flour
6 T. butter, melted

Recipe Directions for Cottage Cheese Pancakes

Whip cottage cheese in Kitchen Aid. Add the flour and eggs. Mix until smooth. Add melted butter last. This will be a thick batter. Cook pancakes until golden, then flip and cook for an additional minute. Do not overcook. These pancakes are moist and should spring back to the touch.
